This weekend’s AT&T Winter National Championships is important. Not only because it allows swimmers the2013 Winter Nats (small) opportunity to gauge training mid-season, but also because many college athletes will be in attendance. Peppermint Pie

Let ice cream sit at room temp until soft enough to put it in a bowl and stir. As soon as it reaches a doughy consistency, pour the ice cream into the crust and smooth evenly. Place pie in freezer.

Before serving, crush up candy canes, generously sprinkle the top** and let pie sit at room temp until soft enough to slice with a warm wet knife.

*If an Oreo crust isn't available, substitute with a graham cracker crust.

**You can sprinkle candy cane on top of the pie before freezing it but I find the moisture in most freezers softens the candy into a crunchy goo. This can be tasty but for presentation's sake, wait until right before you serve.

Açaí Breakfast

Blend

-12 oz. açaí juice*

-1 cup sliced strawberries

-1 cup plain yogurt (agave nectar optional)

Top With

-1/2 cup of your favorite granola (or 1/4 cup ground flax seed)

-1 sliced banana

*açaí berries begin decomposing rapidly after being harvested so it's most likely that you will find them at your local market in the form of powder, pulp or juice.

This is one of my favorite snacks before a long workout or between workouts if I'm exercising more than once in the day.

-1 Eggo Nutri-Grain Blueberry Waffle

-1 heaping Tbsp. of Skippy Natural Creamy Peanut Butter

- drizzle of honey

Pumpkin Seeds

Recipe

-Once you've taken all of the seeds out of your pumpkin separate them from the pulp.

-Rinse/strain the seeds well.

-Butter or oil an aluminum foil covered cookie sheet.

-Spread the seeds out evenly on the foil.

-Sprinkle with cinnamon, nutmeg and ginger (or experiment with your favorite seasonings).

-Cook at 300˚F for 10 to 30 minutes*.

-Let cool and enjoy!

*Seeds cook at different rates so check often and when they look golden brown they are done.

Snack Attack

For a post workout snack I love making smoothies. Usually I throw in whatever fruit I happen to have in the kitchen but ideally I'll use the following ingredients:

-1 cup strawberries

-1 banana

-1 heaping tablespoon almond butter*

-2 cups non-fat yogurt

-1/2 to 1 cup chocolate milk depending on the consistency of the yogurt

-1 teaspoon agave nectar**

Blend and enjoy. If you have any favorite smoothie recipes please post them in the comments section so I can give them a try!

 

*Peanut butter may be used as a substitute. **Honey may be used as a substitute.
